Heart-Shaped Cinnamon Crisps with Fruit Salsa

Ingredients:

  • 2 dozen La Cocina Corn Tortillas
  • Canola oil for deep frying
  • 1 1/2 c sugar
  • 3 tsp cinnamon

Directions:

In a large Ziploc bag mix your sugar and cinnamon, then set aside. Next place your oil in a deep pot on medium heat or use a deep fryer. Open your tortilla pack and using a scissors cut the tortillas into quarters. Now by trimming the edges and cutting a triangle out of the top you can easily make a heart shape. Using a slotted spoon place these heart shaped tortilla pieces into your hot oil. Fry them just until they are crisp. Then again using your slotted spoon place the crisps into a bowl lined with paper towel. After frying up a small batch, pour the crisps into the Ziploc bag of cinnamon sugar and gently shake it to coat them. Carry on with the process until all the tortilla crisps are fried and coated in sugar mixture.

Fruit Salsa

Ingredients:

  • 1 sweet apple
  • 1/4 c blueberries
  • 2 ripe kiwis
  • 1 c raspberries
  • 1 c strawberries
  • 1 T frozen orange juice concentrate
  • 1 T brown sugar
  • 2 T white sugar

Directions:

Peel and cut apple into pieces. Then using a food processor chip until fine. Empty the apple pieces into a bowl and set aside. Next place the blueberries, raspberries, strawberries, and peeled and sliced kiwis into the processor. Purée this mixture. Pour into the bowl with the apple and mix. Add the sugars and the Orange juice concentrate. Cool for 1 hour to allow flavors to mix.
