Cheesy Southwest Chicken Soup

  1. Melt the margarine in a pot. Once it is fully melted, mix in the all-purpose flour. Make sure to stir it so it doesn’t burn. It will become a thick paste.
  2. Add in the milk, heavy cream and sour cream. Bring to a simmer. This will then be a thick sauce.
  3. Once it is simmering, add in the Velvetta cheese cubes and let them melt.
  4. Add in the chicken broth and bring to a low simmer again.
  5. Add in the chiles. corn, taco seasoning, rotisserie chicken and potato soup. Stir well and bring back to a simmer. Let simmer for 15-20 minutes.
  6. Tun off the heat and add in the finely chopped cilantro.
  7. Serve with sour cream and crushed Original La Cocina chips. Enjoy!
