Cheesy Southwest Chicken Soup
Ingredients
- 1/4 cup margarine
- 1/2 cup all-purpose flour
- 2 cups milk
- 2 cups heavy cream
- 1 cup sour cream, plus additional for serving
- 1 cup Velvetta cheese
- 3 1/2 cups chicken broth
- 1 4-ounce can of chiles
- 4 cups frozen corn
- 1 packet taco seasoning
- 1 bunch cilantro, finely chopped
- 2 pounds rotisserie chicken, shredded
- 2 cans cream of potato soup
- La Cocina Original Tortilla Chips
Directions
- Melt margarine in a pot. Mix in all-purpose flour to make a roux.
- Slowly add milk, heavy cream and sour cream, stirring constantly. Bring to a simmer.
- Once sauce thickens, add Velvetta cheese cubes. Stir until melted.
- Add chicken broth and return sauce to a low simmer.
- Add chiles, corn, taco seasoning, rotisserie chicken and potato soup. Stir well and let simmer for 15-20 minutes.
- Remove from heat and add cilantro.
- Serve with sour cream and crushed La Cocina Original Tortilla Chips. Enjoy!
