  1. Preheat oven to 425 degrees Fahrenheit. Spray a baking sheet with a coat of baking
  2. Heat 1 tablespoon of oil in a large pan on the stove over medium heat. Add the
    onion, garlic and jalapenos until the onion is translucent.
  3. Add chili powder, paprika powder, oregano and ground cumin and cook until
    fragrant. Turn off heat.
  4. Mix in the lime juice, cilantro, 1 ¾ cups cheese and rotisserie chicken.
  5. Time to assemble the tacos. Place 2 tablespoons of the meat mixture onto half of
    the taco. Add 1-2 tsp of cheese to the top of the mixture. Fold over the tortilla shell
    and lightly spray with cooking oil. (Hint: Place the bag of corn tortillas into warm
    water to warm them up slightly. They will then be a little more pliable. Once they are
    folded in half, place a heavy dish on top of the tacos to keep them from opening.
    Once they’ve baked for 5 minutes, you can remove the heavy dish. At this point, the
    cheese will have melted enough to act as a bonding agent to keep the taco closed.)
  6. Serve with sour cream, salsa and guacamole and enjoy!
