La Cocina’s Loaded Guacamole
Ingredients
- ¼ cup canned whole kernel corn
- 4 avocados, peeled and mashed
- 1 poblano pepper, finely chopped
- 1 Roma tomato, finely chopped
- ¼ cup fresh cilantro, finely chopped
- ½ cup feta cheese, crumbled
- ¼ cup pickled red onion
- 3 tablespoons lime juice
- ½ teaspoon salt
- La Cocina Chips
Directions
- Heat frying pan on medium. Add corn, mixing often to avoid burning. Remove from pan when corn begins to char.
- Mix corn and remaining ingredients in serving bowl.
- Serve with La Cocina chips and enjoy!
