Strawberry Cheesecake & Apple Pie Dessert Tacos

  1. Cut 2 circles out of the tortilla shell.
  2. Use the taco press to fry the tortillas in hot oil. (see picture below).
  3. Mix the white sugar and cinnamon. As soon as the taco shell comes out of the fryer,
    coat in the cinnamon sugar mixture.
  4. Place them on a drying rack or paper towel to cool down.
  5. For the strawberry filling:
    • In a small saucepan, combine cornstarch, sugar and water and whisk until
      smooth. Bring it to a boil and whisk for 2 minutes until it starts to thicken.
      Remove from the heat and stir in the strawberry Jello until dissolved. Let the
      mixture cool for 15 minutes.
    • Cut the strawberries into small pieces. Once the above mixture has cooled a
      little bit, mix in the strawberries.
  6. For the cheesecake filling:
    • Let the cream cheese come to room temperature. Once at room temperature,
      beat with an electric beater until smooth.
    • Add in 1 cup of heavy whipping cream and beat until stiff peaks form.
    • Add in vanilla and powdered sugar and beat again until all is well incorporated.
  7. To assemble:
    • Apple pie dessert tacos: fill half of the tortilla chills with pie filling. Place a
      small scoop of vanilla ice cream on top. For the
    • Strawberry cheesecake dessert tacos: Place the cream cheese mixture into a
      small Ziplock bag. Cut a small hole in the corner of the bag. Use this to fill the
      taco shell about halfway with the mixture. Then place about a teaspoon of the
      strawberry mixture on top.
  8. Serve and enjoy!
